Raw Liver Honey Gummy

An exploration of liver’s possibilities. I’ve been thinking about this one for a while now. 4 ingredients, keeping it easy and straightforward. It’s very gentle and approachable for squeamish folks. If you added something like a cherry puree to these I think your kids would ask for seconds. Even just like this though it’s not offensive and nothing overtly liver about it. It works for me anyways. I share this just in case you too are exploring consuming raw liver. 

I’m into it. It’s so gentle.

I didn’t measure anything so these are just ballparks. I’m not sure what the shelf like would be like but you can freeze extras. I’d eat them soon or half the recipe if you are thinking about trying it. I’m going to eat mine within the week and I think that should be fine. Store them in the fridge. Keep in mind that these are raw foods and should be handled with care and intention to prevent unnecessary spoilage or sickness. This was how I did it, and it worked for me.

Ingredients

  • ½ cup raw honey
  • 4 egg yolks 
  • 1 cup raw liver
  • Pinch of salt
  • 3-4 tablespoons of gelatin
  • I had about a 1:1 ratio of honey to liver

Instructions

  1. Whip honey. [Instructions from Hannah of Lovely Delites: Add honey into an electric mixer and whisk on high speed for 10 minutes. I used one cup and 10 minutes was the perfect amount of time. Honey will turn a pale color and become light and airy.]
  2. Whip in yolks one by one. 
  3. In a blender puree raw liver till smooth.
  4. Add whipped honey yolk mixture to blender and blend till mixture is at least 60⁰.
  5. Add pinch of salt.
  6. Bloom gelatin. [To “bloom” gelatin, simply sprinkle the gelatin powder onto the surface of a small amount of cold water and let it sit for a few minutes, allowing the gelatin to absorb the liquid and soften, becoming translucent and ready to be incorporated into a recipe; essentially, it’s hydrating the gelatin before fully dissolving it in a hot liquid.]
  7. Dissolve bloomed gelatin in just enough boiling water, stir with fork, it might take a minute but it’ll dissolve.
  8. Blend gelatin into liver honey mixture.
  9. Set in your mold of choice.
